Die physikalisch-chemischen Parameter, nämlich TSS (°Brix), Säuregehalt, Gesamtzucker (in Prozent), Ascorbinsäure (mg/100 g) und die organoleptische Qualität (9-Punkte-Hedonik) in Bezug auf Farbe, Textur, Geschmack und allgemeine Akzeptanz wurden zu Beginn und bis zu 6 Monaten Lagerung bewertet. Der TSS-Gehalt (72,70), der Gesamtzuckergehalt (45,70) und der Ascorbinsäuregehalt (1,65) des Fruchtriegels nahmen ab, während der Säuregehalt (1,65) während der sechsmonatigen Lagerungsdauer bei allen Behandlungsgruppen zunahm. Bei der organoleptischen Bewertung der Fruchtriegel hinsichtlich Farbe, Aroma, Textur, Geschmack und Gesamtakzeptanz zeigte die Behandlung T4 (50:50, Papaya: Banane) mit 7,93 eine höhere organoleptische Bewertung und eine bessere Verbraucherakzeptanz während der Lagerung.
