O nosso trabalho teve início com um estudo etnobotânico em três regiões: Annaba, Guelma e El-Tarf (Argélia), que confirmou o lugar que esta planta ocupa na fitoterapia tradicional. Um estudo histológico da folha e do caule permitiu-nos identificar as características de adaptação desta espécie à seca. A extração do óleo essencial e a análise química por GC/MS revelaram a riqueza deste óleo em borneol, verbenona e beta-linalol. O óleo essencial de alecrim apresentou uma boa atividade antibacteriana contra Escherichia coli, Klebsiella pneumoniae e Acinetobacter spp., com efeito ligeiramente menos acentuado contra Pseudomonas aeruginosa, bem como uma forte atividade antioxidante. Os outros extratos de alecrim (taninos, infusão e decocção) possuem uma atividade menos pronunciada do que a do óleo essencial.
